Quick and Easy Ways to Eat Your Veggies

veggies-heartVegetables provide numerous health benefits to everyone, thanks to their high fiber  content and rich supply of essential vitamins and nutrients. Eating veggies, is especially important to women living with Polycystic Ovarian Syndrome (PCOS).

The Amazing Benefits Include:

  • Regulating blood pressure
  • Lowering cholesterol
  • Improving insulin
  • Cancer prevention

When selecting vegetables, the more variety and color you consume, the better. Vegetables fall into two categories: Starchy and non-starchy. Starchy vegetables have a higher content of carbohydrates. In order to help control insulin levels, women with PCOS should limit their daily intake of starchy vegetables. Examples of starchy vegetables include corn, peas and potatoes.

Non-starchy vegetables contain a lot of fiber and are low in calories, so they are not only satisfying, but they will help you stay full longer. Some examples of non-starchy vegetables include mushrooms, zucchini, cucumbers, green beans, tomatoes, celery and bell peppers.

Tips to Help You Eat Vegetables:

  • Add bell peppers, tomatoes or onions to an omelet
  • Add lettuce, tomato, pickles and onions on your sandwich
  • Snack on baby carrots or celery dipped in hummus
  • Buy fresh vegetables in season (cost less)
  • Add your favorite assorted vegetables to a salad
  • Stock up on frozen veggies for quick and easy cooking
  • Substitute vegetables as your side when dining out
  • Add a vegetable drink such as V8 or Campbell’s Tomato Juice
  • Buy vegetables that are easy to prepare such as salad mix. Then, add baby carrots or grape tomatoes for a salad in minutes.

Happy Mother's Day!

Happy Mother's Day to all of you wonderful moms! As a mother, I know the feeling of going to work, caring for your husband and kids, cooking, cleaning, running errands, doing laundry, dishes, and being in charge of EVERYTHING and EVERYONE while receiving no appreciation. This day is for you - Enjoy it! I hope everyone has a Happy Mother's Day. Relax, enjoy your family and demand your hubby to take care of the household chores for once! 


I received the greatest Mother's Day gift any mother could ever ask for- my son. I can't believe he is two years old today. It feels like it was only yesterday that I was in that hospital bed awaiting his arrival. Eight years ago I was told I would never be able to have children.  I was torn up inside from the thought of never being able to have a child. This just goes to show God is in control. I feel so very blessed to be the mother of such a little monster angel. For all of you women who are in similar situations, never give up hope!

When I was diagnosed with PCOS, I was told I would never have children. I felt like I completely lost myself. I was such an outgoing person but those word suddenly stole my happiness. I am thankful that I found Daily Strength. The members of my PCOS group were all so supportive and uplifting.
